Beer Bread

3 cups flour                                       1 egg

1/2 cup sugar                                    1 (12 oz.) can beer

Let both the egg and the beer set until they reach room temperature.

Mix four and sugar.  Add egg and beer and beat.  Grease a loaf pan.  Bake at 375 degrees for 55 minutes.

 

This recipe was given to me by Bob Carey, who played for the Chicago Bears and the Los Angeles Rams.


Kentucky Butter Cake

1 cup butter                                       2 cups sugar

4 eggs                                                2 tsp. vanilla

3 cups flour                                       1 tsp. baking powder

1/2 tsp. baking soda                        1 tsp. salt

1 cup buttermilk

Cream butter until light.  Gradually beat in sugar, creaming until light and fluffy.  Add eggs, one at a time, beating well after each addition.  Add vanilla.

Mix together dry ingredients and add to creamed mixture alternately with buttermilk, beating thoroughly after each addition. 

Turn into a greased and floured 10-inch tube pan.  Bake at 350 degrees for 1 hour, 10 minutes.  Place cake, still in pan, on a cake rack.  Run a spatula around the sides and tube of pan.  Prick top of cake with a large, 2-tined fork.

Sauce

1 cup sugar                                       1/4 cup water

1/2 cup butter                                    1 tbsp. vanilla or rum flavoring

To prepare sauce, in a medium saucepan, heat sugar, butter and water in a pan until butter is melted. Do not boil.  Remove from heat and add flavoring.

Pour hot sauce slowly over cake, allowing it to seep into the holes and along sides and tube of pan.

Cool thoroughly before removing from pan.
